【糖醋桂花魚】食譜

材料:

原條桂花魚———1條
鹽———1茶匙

醃料:

水———5 湯匙
醋———4湯匙
糖———3湯匙
鼓油———2湯匙
料理酒———1湯匙
蔥———2條
薑———5片
生粉———適量

煮法:

步驟 1:
將已去鱗、去鰓、去內臟的原條桂花魚用清水洗淨後用廚房紙吸乾水份。在魚身上抹上1茶匙鹽以稍微醃製10分鐘。

步驟 2:
鍋裏加入適量油燒起,先加入幾片薑墊底,將魚下油鍋煎,中火慢煎,邊煎邊輕輕顛鍋,使魚儘量不會粘鍋。煎約三分鐘變金黃色,翻魚身煎另一面,同樣煎約三分鐘。將煎好的魚盛出上碟。

步驟 3:
在鍋中加入1湯匙料理酒、5湯匙清水、4湯匙食醋、3湯匙糖、2湯匙鼓油,緩緩攪拌混和。

步驟 4:
在糖醋汁中加入生粉水、蔥花,勾芡。

步驟 5:
最後將芡汁澆在魚上,即成。


Sweet and Sour Mandarin Fish Recipe

Ingredients:

  • Whole mandarin fish — 1 fish
  • Salt — 1 teaspoon

Marinade:

  • Water — 5 tablespoons
  • Vinegar — 4 tablespoons
  • Sugar — 3 tablespoons
  • Soy sauce — 2 tablespoons
  • Cooking wine — 1 tablespoon
  • Spring onions — 2 stalks
  • Ginger slices — 5 slices
  • Cornstarch — appropriate amount

Cooking Method:

Step 1:
Clean the whole mandarin fish (Gutted, Gilled, Scaled). Rinse with clean water and pat dry with kitchen paper. Rub 1 teaspoons of salt over the fish and marinate for 10 minutes.

Step 2:
Heat a suitable amount of oil in a pan. Add a few slices of ginger at the bottom, then add the fish to the pan and fry on medium heat. Gently shake the pan while frying to prevent the fish from sticking. Fry for about 3 minutes until golden brown, then flip the fish and fry the other side for another 3 minutes. Place the fried fish on a plate.

Step 3:
In the pan, add 1 tablespoon of cooking wine, 5 tablespoons of water, 4 tablespoons of vinegar, 3 tablespoons of sugar, and 2 tablespoons of soy sauce. Stir slowly to mix.

Step 4:
Add cornstarch water and chopped spring onions to the sweet and sour sauce to thicken.

Step 5:
Finally, pour the sauce over the fish, and it’s ready to serve.
